Award-Winning Coleslaw Recipe
I am so excited to share this great recipe with you!
A few months ago, my Grandma Klussmann entered a recipe contest, and won with her healthy coleslaw recipe. Not only did she win a Hamilton Beach food processor, but she also got her award-winning recipe featured in the Winter 2008 issue of Diabetic Living.
Gram’s Holiday Slaw
One 10-ounce package (or 6 cups) of finely shredded green cabbage
½ cup dried cranberries
½ cup toasted and chopped walnuts
¼ cup finely chopped red onion
¼ cup finely chopped green bell pepper
¼ cup cider vinegar
3 tablespoons canola oil
1 tablespoon sugar (or sugar substitute equal to 1 tablespoon)
½ teaspoon salt
1. Combine cabbage, cranberries, walnuts, onion, and bell pepper in a large bowl.
2. Whisk together canola oil, cider vinegar, sugar, and salt in a small bowl.
3. Pour dressing mixture over slaw mix and stir well.
4. Refrigerate for up to 24 hours, and stir again before serving.
I’m thinking this would be good with a few variations as well. Try using a mixture of green and red cabbage, or throw in some apple chunks to give a more fruity flavor.

That sounds delicious and looks healthy too. I’m going low carb so I’d probably use the sugar substitute and maybe drop the onions but I am going to make this tonight. Yum!

@Paunchiness - Let me know how you like it! I love coleslaw..but not the creamy versions, so I was so excited to share this recipe. Yummy.

I was looking for this EXACT recipe, thanks for posting it! My mother in law brought it to Thanksgiving (she got it from the magazine). I usually hate coleslaw, and even cabbage- but this stuff is incredible. I could eat pounds. The flavors blend so well. Tell her I absolutely love it!
